My plan is to issue a Letter Before Court Claim and then, in the absence of an offer of full and final settlement, make a claim at the County Court.

I think you might first approach the hotel and ask for a copy of your receipt or some other confirmation of your stay. Failing that, your credit card statement showing payment to the hotel should suffice.

If you paid for the hotel in cash and you or the hotel are unable to furnish a receipt of any kind, TAP might well be off the hook.

As for food/refreshments i can't see the airline refusing to pay a reasonable sum.
