that's definitely too long for a domestic flight as you do not have to go through immigration (just security and may be Check in (if you did not do any OLCI).
I had never longer than 15 minutes through any domestic security in Thailand

on many of my various domestic flight I arrived just 1 hour before departure, but I had OLCI with electronic BP and only hand luggage and most were with TG

maybe others with experience with VietJet might give more advise about check in
