Well peak brasserie may have reached its apex at Brasserie 1930 in the Capella.
It got 2 hats this weeks in the Good Food Guide and I went on the weekend.
It’s really very good but is very expensive. My spanner crab spaghetti with sea urchin sauce entree was $52 and my whole rainbow trout with citrus butter and roe was $62.
Service very good. Krug available by the glass ($135!!!) which is ridiculous so I settled for Ruinart Blanc de Blanc ($60) which is still very pricey.
Hotel itself is stunning - had the privilege of staying a night. Attention to detail is ridiculous and it is finally a hotel I feel worthy of competing with some other top notch hotels in HK, Singapore etc
Breakfast served in the Capella is served in Brasserie 1930 - selection is decent but not the widest out there. The produce is top notch - think San Daniele prosciutto, Pepe Saya cultured butter, alpine smoked salmon, St Ali coffee, pastries all beautifully done with the ubiquitous bacon, sausages, scrambled eggs together with some interesting made-to-order dishes like crumpet Benedict and a croissant bun scrambled eggs with scrambled eggs and salmon roe.
