Intercity trains will have luggage racks at the ends of carriages that can accommodate large cases. Commuter trains may well not. London Underground doesn't. In any case I'd say it's perfectly feasible - just not necessarily comfortable (on busy trains with no luggage storage, you may need to stand). And either way, my personal preference would be for one rather than two.
