I flew UA2424 EWRLAX 22OCT in PE and had that same dish (below). I believe the choice of main entrees was identical in both J and PE, but in demi-steerage it was referred to as simply “chicken” or “pasta.”
I agree with you, the chicken curry was tasteless and poorly executed. The rice noodles sweated out their moisture in the time between the kitchen and the galley, creating that unsavory puddle in the plate and diluting any flavor that might have existed in the sauce.
