Best Use of my Virgin Airmiles

Not sure if something like this has been posted but thought I would ask anyway. So, my partner and I are getting married next year and are eye-ing up Key West & Orlando as our honeymoon destination (flying from LHR).
Now, we are fully aware this would fall under a multi-city flight (LHR to EYW & MCO to LHR, with the flight from EYW to MCO booked separately), but we have a lot of air-miles to use up and are having difficulty trying to use them for the above.
It won't allow us to do points plus cash for a multi-city, so that's not an option.
If we do want to use only points, it seems to have very limited options on what days we can use it (for instance, it's only allowing us to select leaving LHR on September 1st, which is a day after our wedding, so not ideal) but is allowing us to pick any day coming back.
So our first question is, why is that and is there any other way around it or are we missing something obvious?
Second question is, looking at the rough price guide, we are 60,000 air-miles short to fully use this system. Is buying points worth it, or does it just work out the same as if we had paid upfront? Currently there is a deal on where if you buy X amount of points, you get 20% extra on-top.
We were open to going British Airways as it was cheaper in general, but it's not showing a multi-city journey to Key West for whatever reason, so unfortunately they are ruled out.
Any help or info would be great!
