I recently renewed mine and had the same experience.

You can’t do it before you arrive in HK; after you clear (regular) immigration, but before heading to baggage claim, go to the e-channel desk and re-apply. They’ll transfer the sticker from your old to your new passport and register the details of your new passport in the computer. They also asked me to supply my frequent flyer credentials once again.
