Excluding the first item, there is no real description of what the meal might consist of. If you select Hindu, is it chicken, rice and curry??? Who knows. Mystery meals? Has anyone else experienced this?
I’ve flown PE many times and with AA. I have always been able to select from two standard meals, usually a vegetarian and a chicken or shrimp option. Those meals you’ve listed are also options, but they’re not the only ones. Maybe give it a week or so and see if the choices get updated.
