Some weeks ago somebody wrote that there could be the first flight on November 1.
It seems that EY flights will switch over around midday on 14 November. Based on Expertflyer, switchover for other airlines seem to vary for the time being, although this may be evolving as we get closer to the date.

No terminal maps available yet that I have seen - I would expect it to be available shortly before formal opening.

It's not clear which flights will remain Terminal 1/3 after 14 November, but it will be a bus service to the extent such transfers are required.
im going to guess next 6 months will be a mix of last min changes and next April onwards we should have a more refined product.
There will naturally be teething issues, but I wouldn't expect entire facilities (e.g. lounges) to be not ready yet.
