So as several here commented already Amex do not cancel a companion voucher once it has been earned and deposited in your BA account if you cancel your BA Prem Plus card.

This was confirmed by the Amex staff on the phone line, although if you use the chat option via your account page they do highlight a clause in the contract that states the following…

- If you have earned a British Airways Companion Voucher, please be aware that Companion Voucher bookings must be made using the British Airways Card they were earned with. This is set in the Terms and Conditions on the Companion Voucher. Cancelling this Account may mean you are unable to redeem your Companion Voucher.

However on the phone they say in reality all you need is an Amex card to pay the fees on the booking and they have no mechanism to actually cancel an issued voucher that lands in your BA account, so anyone saying they had one cancelled, is potentially telling porky pies? 🤷🏼‍♂️ When you go to use your voucher on BA it does require the name it was issued under to enter a valid Amex card in that name, so don’t know if it would allow a partners card to pay for the fees or not now.
