Award availability not showing for connections

This is causing me headache and I’ve tried different browsers, someone else’s login, different devices...
lim trying to book a flight to MEX with a connection from Europe, but it always comes up with an error on their site and app when I try. It doesn’t matter which European gateway I choose and also is the same to any other Longhaul destination, but as individual sectors they are all showing availability…..which can’t be booked like that online for Avios.
I tried call IB and book through them directly. It took a while to explain to retrieve flights in sectors instead of origin-destination, but interestingly they claimed they’re not seeing any availability on the shorthaul sectors for Avios, whilst the same flight show on their site.
I’m close to giving up, as my most preferred flight options have in the meantime already gone, but was wondering if anyone has any other ideas how to book connecting flights into one ticket that only seem to be available individually.
