Just a couple of hints based on my experience visiting Assisi several times when I lived in Perugia about ten years ago: if possible, don't visit on the weekend, even if October is low season. The town is inundated with tourists from all over the world, including Italy. It turns into an exceedingly uncomfortable experience in contrast to a charming little town during the first five days of the week! Also, since you'll have your "own" car, if you are thinking of having real lunch and not just a panino, instead of doing that in Assisi (most restaurants are typically tourist-oriented), try a small village in the area (e.g. Bevagna, Montefalco, etc.).
