This past weekend, I went to both Angelina, Jean-Paul Hévin, and La Maison du Chocolat (La Madeleine).
There was a line at Angleina at around 12:00noon (no surprise). The service was impersonal but the hot chocolate was truly heavenly. It is served with a small bowl of luscious Chantilly cream. The tea salon decor is a faded and in need of a bit of refurbishment. Their speciatly is also the Mont-Blanc.
Jean-Paul Hévin, located on St-Honoré, has a nice tea salon upstairs, while the chocolate shop was downstairs. I had an amazing pastry that looked deceptively ordinary and simplistic (its appearance was quite disappointing honestly); it looked like a brown tennis ball. All their more attractive pastries were sold out as I arrived near closing time. But the flavors and texture were so complex and it was so delicious I inhaled it.
The tea area at La Maison du Chocolat was transformed to increase more sales area, I'm guessing only for the winter holiday season.
This past summer, I had a millefeuille at the upstairs tea salon at Fauchon. The experience was quite elegant and the service was gracious.
Dalloyau is fine. I have found the decor to be cool, which matches the service.
I've also have had breakfast and late night desserts at Ladurée (Champs Elysées) many times. There are places that serve fancier desserts (Pierre Hermé) or have better service (any Paris palace hotel). But this is my favorite standby for great pastries at reasonable prices. I have performed the magic trick of the disappearing dozen of macarons here many, many times......
