Flight crew are rated on all SH Airbus 319/320/321 and CEO and NEO versions. They are essentially the same and the same techniques are used - with some small differences. The 321s require more careful handling close to the ground as tail strikes are a bigger risk. Different models allow different amounts of speed brake with flap and dependent on whether the autopilot is engaged or not. There are varying states of sophistication in the avionics - the newer the more stuff they have. On the checklist there is a summary and this forms part of each brief for the section of flight being briefed. So yes, you sit down and decide what you need to do today
