L'effervescence is extremely easy if you have a minimum of 3 guests.
Quintessence - I just checked and they have two dates available for parties of 3 or 4 between now and Jan 1 but they open reservations daily.
Yoshitake - You will require a Japanese omakase account as he restricts availability to foreign accounts. That being said it's overpriced, there's no pictures allowed, and you're most likely better off going somewhere else, or to one of his apprentices like Murayama if you really want the abalone liver sauce.
Consider using Tabelog instead of Michelin.
Sugita, while only 2*, is the top rated restaurant in all of Japan on Tabelog and very much bookable if you don't mind sitting in the private room.
You can assume that I would have access to the Andaz and Park Hyatt Tokyo concierges, potentially also the PHK concierge.
