I don't think they ever formally announced that they were ever installing 1-2-1 seats to begin with, it just started happening. I remember seeing people speculating that they'd do it "after the pandemic" but we are presumably there and nothing to my knowledge.
Well, those deliveries were all mid-pandemic so it wasn't really something they could jump up and down about - I believe the first one was in April 2020 which was about as bad a time as any to launch a new product!
