Interestingly, an agent offered me the option to change my second segment on a domestic award flight (Alaska metal) to > 24 hours. And the agent citing the 24 hour rule all acknowledged they have discretion on this--especially in any kind of IRROPs, provided saver availability is showing on the partner carrier.
IRROPS is very different. Same with schedule changes. But when you are initially buying a ticket, or making a voluntary change, the computer is going to price it out according to the fare rules.
So you need to read the fare rules, but the definition of a stopover is fairly standard. For international connections it's going to be <24hr. For domestic connections it's going to be <4hr or next available flight.
Here an example of the section on stopovers from a random domestic AA fare I pulled up (PHX-NYC, but this is going to be standard boilerplate)
NO STOPOVERS PERMITTED.
NO STOPOVER OCCURS IF PASSENGER TAKES NEXT AVAILABLE
FLIGHT WITHIN 4 HOURS.
