It's best to settle on an itinerary on GoogleFlights first, then click through from there to the Qatar website. Once there be very careful - you'll be given choices of flights on each sector: select ONLY those flights which figure in your Google itinerary. Some of the other combinations presented are code shares via Bangkok (etc) and boost the price substantially.

After hours of playing around with it patiently I figured out that this initial warning in yellow should not deter me from selecting flights first, just like you explain.
Then it comes down to either getting the red "No fare can be found ..." error message or the passenger information screen.
There are probaby more elegant methods for finding availabily (EF?) but I have been finding many dates just by trial and error so far.
Like other people I had been trying to select different flights than those google flights showed, in order to get the A350-900 between DOH and SGN at least.
Again, there might be a better way to specifically search for those (ITA Matrix?) but for some reason I did not manage to bring up this sale on ITA at all.
