Really? I must have missed that settings update in the the release notes. The animation, while cool in the beginning, is a bit of a distraction and certainly a huge waste of screen real estate. One of my early gripes about my Tesla.
Are you talking about the visualization on the left 1/3 of the screen that shows your car and what the car's cameras see around it (e.g. other cars, people walking, etc.)?
If so, yes, it can be disabled. In fact, on two of my rental Teslas, it was disabled and I specifically went into the menu settings to enable it because I like it. I think it's labeled "AutoPilot Visualization" or "Full Self Driving Preview" or similar.
