Well I think much of the more luxury choices are congregated around Atacama or Patagonia, a few comes to mind would be Awasi, Expolora, both have lodges in Torres del Paine and San Pedro de Atacama and Explore also has a lodge on the Easter Island. Plus you could also look into boutique hotel chains since I recall there's a couple of R&C properties down in the South for example EOLO around Puerto Bandera and even andBeyond has a hotel in Pucon but I think most of these hotels aren't very accessible so maybe you should also do some research in regards to transportations.
