There is no "AA desk" at AMS, it is a 2 flights a day outstation. Their check in desks will be open for their DFW and PHL flights but are closed at 10am, and in any case BA are your first operator. There is no time to be saved in the T5-T3 transit, when you check in with BA at AMS on the day of your flight they will check you in to your final destination in the US and issue boarding cards for both BA and AA.
