There's two different ways of doing it (but not the above..). You book your outbound online and apply the voucher. You can then either book the return online for full Avios, then call up to have the Avios adjusted, or you can just call up to have your return added to the existing booking, with the tickets reissued and Avios adjusted.

Neither method has a change fee, but both require a call. There could be differences in how much the TFCs or RFS fees are depending on whether you book two OWs or one RT.
