Make life easy for yourselves and get a "limo" service from the desk in the arrivals area or book in advance online.
It's going to be more expensive than Uber/Careem, but a whole lot easier than getting yourself online with the airport wifi. And it really wont break the bank.
Regular taxis are fine, but you need a cool head, patience and maybe a sense of humour to go through the negotiations. I'm sure you're wel equipped with all these attributes, but they'll be stretched after your long trip.
An alternative might be to stay at rhe airport hotel the first night. Use hotel's wifi to call up an Uber the following morning after a good night's rest.
