I would not worry much about ice in better hotels, airlines and lounges in India. Certainly not major airports. Even most better restaurants are not really an issue (I accidentally owned a bit of a restaurant chain when Covid resulted in the office cafeterias being unused and we started selling online food) - I have been briefed a little on where we got water and ice from...

There are countries where that is more of an issue - I still would be comfortable with major hotels and mainline airlines.
