Not sure what you define as pretty late, but when I land late at CUN I usually stay at an airport hotel and then carry on to the nice property the next morning. Planning to do this when I go to SIM next month. The Courtyard right by the airport typically is pretty cheap on a AAA rate. I wouldn't want to land late and then have to drive 45-60 mins to PDC.
