Just completed a two night stay here this week.

Room
We booked a standard room on points and were upgraded to a Deluxe Seaview triple room as a lowly gold member.
Room was huge, with a nice view and balcony, it was recently renovated, but did not have any charm, it felt very sterile. On points it was o.k. value, but I could not fathom spending more than 150-200 euro a night here, the hotel is not that nice.

Pool
Pool looks nice from a distance, but up close there were quite a few pool tiles missing, the sides of the pool were dirty, lots of black gew, and the water is not heated at all.
I did not see anyone enjoy the first minute they tried to get in the pool, quite a shock to the system. Once in it was fine as your body adjusts, but they really should warm the pool a little.

Breakfast
Breakfast was included for gold members, and it was just fine. Quite a decent spread, but very generic American hotel chain vibes and extremely busy.
Unlike most hotels in Italy, they did not offer decent to order coffee, only options were some self service machines.

Clientele
Oh my... This could have something to do with being there over American labor day weekend, but there were ONLY Americans here, I would say over 95% of the guests.
There were massive tour groups with people who clearly have not traveled much. Just walking by the reception a few times, there were so many complaints, about general service, about taxis, ("where can I file a taxi complaint" in a Karen voice), and they were all so loud.
Stay here if you want to feel like you're at the Pallazo in Vegas I guess.

Sorrento
We will never go back, so touristy. Only shops selling souvenirs, and bad quality/overpriced restaurants in the centre. (definitely do not go to O'Parrucchiano La Favorita, what a tourist trap!, do not trust the Google reviews)
And there was a strangely large amount of Irish/English pubs. If you have a car and can drive outside of town, there are better options for dinner though.

Conclusion
We would never return to the Hilton, or even Sorrento.
There are so many better cities/towns and hotel in the area, and especially for the outrageous room rates here, I would prefer to stay on Capri, or a nice resort somewhere else on/near Amafli.
