I live in Orange County now but was born and raised and called Colorado home for many years, this was always my default “slingshot” approach for travel to Europe when I lived in the 303. The extra time in the air is totally worth it when you travel from DEN to either SFO or LAX before heading to EU, you will notice the difference on arrival. Stick with your current itinerary.
