I am thinking of taking a domestic Jetstar flight from Narita to Fukuoka at 12pm, after landing at Narita from Vietnam at 6:44am on a Tue on JL. My questions:

In general, I am not a big fan of low cost airlines. However, if I choose to fly JL or NH from Tokyo to FUK, then I will have to first go to Haneda. I am ok with this, but making this extra trip means that I will lose an extra two hours on the Narita-Haneda limo bus.
From a cost perspective, the Jetstar option is almost the same as the JL/NH option.

The five hours buffer are more than enough, even you need to walk to Terminal Three for your connection flight to Fukuoka. Narita immigration clearance time really varies so five hours are plenty.
My experience with Jetstar Japan is a bit better than Jetstar based in Singapore but it is a still a LCC experience.
The planes are the same same across all Jetstar brands, but the inflight buy on board service is of course unique to Japanese. If you want a hot meal, you need to pre-order. If you purchase the Flex package, it will come with a snack coupon - a meal and a snack, or two snacks. The F/As are what you will expect from Japan but they are very strict with the rules.
In general I like Jetstar Japan better than Peach, so I think you will be fine. Please note that you cannot check in at the airport or drop off your bag more than two hours prior to departure. If you are checking bags, you cannot drop them off at the check in desks till two hours prior to departure. They are punctual to the seconds. If you exit from immigration early, I recommend you just hang out the main airport mall at terminal one till 10am. While terminal three has more shops and restaurants now, there are a bit more to do at terminal one & two. I will just walk over or take the free bus to terminal three until 9:45am.
