Also, if upgrading from premium economy to club world, which taxes do you pay? The lowest reward flight saver taxes or one of the middle ones? Trying to work out how good the value is!

Not in one booking, no. But unlike the Amex 241 vouchers, the person a Barclays voucher has been issued to doesn’t need to be one of the passengers in the booking. So if you have two vouchers you could make one booking for yourself and a partner, and another booking for two of your friends, for instance. If you’re a Gold member you can also get seat selection for all of your party, even if you’re on separate bookings (as long as you are on the same flights, obviously).
You pay the Avios from the ‘most Avios, least cash’ RFS option for the cabin below, and the cash element from the ‘most Avios, least cash’ RFS option in the cabin you’re flying. Although it means you pay less in cash, it reduces the effective value of the voucher on short haul routes, since the ‘most Avios, least cash’ option tends to be punitively priced.
However, on long haul routes, most of the RFS options work out at a similar equivalent cash cost (assuming an Avios value of 1p each) so you don’t lose out as much - though you do lose the option of using fewer Avios and more cash.
