It is indeed possible to just walk from the hotel to the Cruise Terminal,
From Stadhuis (CityHall)
in 1 straigh line going south
Via Coolsingel
Via Beurs
Via Schiedamsedijk / Leuvehaven
Cross the river over Erasmusbrug
Turn right towards the Cruise Terminal
