AMS is easier for connections, especially when coming from a "clean" origin (like the UK). You're basically deposited straight into to the gate area and can be in the lounge within minutes. But the lounge is really quite disappointing - almost perpetually crowded, tiny shower rooms without attached toilets, and the slop they serve is truly disgraceful.
CDG is inherently more complex as there are several different buildings, but I wouldn't say it's bad enough to write off. IMHO the superior lounge experience at least balances the equation, if you have time to enjoy it.

If you have no status, you can pay to select in advance, or wait till check in opens.

Agreed, especially if the OP is travelling solo.
The hard and soft product on the AF A350 are just a step up from KL's 777. As noted above none of the 772s have the new seats, and even if there's a refubished configuration scheduled for the OP's flight I wouldn't count on that sticking.
