Personally, I would come and relax here and then go stay in Tulum or Akumal or Playa del Carmen to go to Coba, Chichen Itza, cenotes, snorkel with turtles, etc. There are a couple of eco parks that would be great for families with kids - Xcaret, etc. You could even take a ferry over to Conzumel for great snorkeling!
Yes, having a car is vital if you plan to leave the resort. The drive from CUN isn't hard, but it isn't close and if you arrive in the evening it's long stretches of near pitch black driving. Once the new Tulum airport opens up it should be much easier.
