Well, I suppose that one can have charcuterie from beef too, as in viande des grisons or Bresaola but, yes, cheese cannot be considered charcuterie by any stretch of the imagination. As to so-called 'turkey charcuterie', the correct term is not 'charcuterie' but 'abomination'.
