As to Guinness, why not go for a brewery tour and get a pint as the place it's made?
Temple Bar (the area and the actual bar) are not wholly unlikeable. There are crowds and live music, etc.
But you have to go there in the knowledge that it will be almost, if not completely, exclusively other tourists who will be drinking there, and you will be drinking the most expensive pints in Dublin - think I saw a receipt on Facebook recently which suggested it was now north of €10 a pint in the Temple Bar, to which they had the cheek to add a service charge!
