7 hour Layover Advice

Hi,

First time I visited HK many years ago I partied and remember nothing. Second time on a layover I ate at Vea - yum! Now it's time for round 3:

Land around 17.30 next monday, depart 0020. Travelling solo.

Thinking of stretching my legs in town - having scanned a few 'layover' guides I'm thinking:
  • Quick bite to eat in a Lounge (I know there's better food available in town, but the lounge is free)
  • Check carry-on in to the lockers/storage at T1
  • Catching the train to Central
  • Star Ferry to TST
  • See Symphony of Light from the Ave of Stars (8pm)
  • Something else? Observation wheel?
  • Back to HKG for check in for flight #2.
My questions are two-fold really...
  1. Do I need to get an Octopus on-loan/tourist card just to use the Star Ferry (and the Airport Express maybe?)
  2. Does my schedule leave enough time to fit in something else (cheap-ish) in?
Any comments/suggestions/recommendations much appreciated!
