Italy has a fair amount of coeliacs, so one would hope that they can deal with that!
Last year I found the F&B service at the Conrad itself very messy and disorganised, especially at the main restaurant. It sounds like things have improved.
The main restaurant was the only place in resort we ate that was actually good. Everywhere else Including the signature Conrad Sardinian Restaurant was pretty poor. The Dunes was ok for lunch across the road, they certainly made a lot better fist of pizzas than the pizzeria in the main Laguna complex managed.
Main restaurant aside, I would eat out here, it is that bad and the local places are less than half of the price for significantly better quality.
