If you can, use Iberia's website as they tend to have a lot more where to chose (I can see plenty on the 12th for instance using IB IOs App).
You can move your avios from BA to Iberia plus but you need the account to be open for more than 90 days and have at least 1 avios on it (for that you can move Amex points to IB Plus or maybe credit a flight/car rental/hot you do one day to get the account "active")
