As always, different aspects of the premium travel experience (assume we’re not talking about ET/WT here) are important to different people, food and beverage being one of them. As mentioned above, there might also be an expectation relative to the ticket cost and also the marketing by the airlines “the finest wines” etc…
In addition to that, there may also be a comparison to other airlines in the same cabins on the same routes, and (perhaps equally pertinent on BA) a comparison to what that airline previously offered.
When I want good wine my first thought isn’t to buy an airline ticket, but I will take an interest in the wine offering and how it compares to the marketing and competitor offerings. I don’t really drink a lot in the air, generally only with the main meal long haul, but I’m still interested as an amateur wine enthusiast.
