We also regularly dine at bubba gump’s in Monterey CA plus we went to the one in Universal City (by Universal Studios) in Southern California in April 2022. Universal City is like a tiny version of a retail & restaurant section in Vegas.
I looked up Bachannal and it seems to be $80 for supper. With the wealth of choices, it seems like a very fair price. A steak / seafood restaurant would cost more on an overall basis. My mother alas still feels it’s too expensive and I don’t travel with her.

It was maybe five years ago now, but my wife and I ate at The Breaker's Sunday Brunch Buffet and five years ago it was $150 a head, while everything and I do mean everything was expertly prepared and every mouthful delicious it appears from the OP pics that there was far more choices at the Bachannal buffet, and from the OP's descriptions equally delicious and for a little less than half of The Breakers.
I have only been to Vegas twice in my life, once for a conference and once to head out to Death Valley.
