I didn't say I was looking for "cheap". I simply said that the hotel we selected was beyond our budget. If there are none within it, so be it. But for now I have a tough time believing $1200/night is the absolute bottom dollar for a place like this.

Sorry no one seems to be giving you the answers you want, finding the needle in the proverbial haystack for you before hotels even set prices for August 2024.
If you really think there are only 50 hotels that meet that criteria....hoo boy. There are probably 150 in Greece alone.
You can filter "boutique hotel," "beach access", 4 or 5 star, with a 4.5+ guest average rationg on Google Hotels. I filtered for random dates in June 2024 (since it is too early for August 2024). There are about 700 in your price range. Since many arent bookable yet for summer 2024, have minimum stay requirements, or dont have prices on Google, that number should hit 1000 easy.
And pretty much all are within driving distance of 1 stop from Minneapolis. There's the Spanish coast, the Balearic Islands, the South of France, Monaco, Sardinia, Sicily, Puglia, Malta, 52352 Greek islands, Turkey, Portofino , the Amalfi Coast, Croatia, Slovenia, Montenegro, Cyprus, and, since you insisted on being pedantic that it doesnt *have* to be in the Mediterranean, the Portuguese Coast.
I wish you the best of luck in getting other people to narrow this down for you. We're staying on a Greek Island in 2 weeks with a private pool suite for $500 a night. Wasn't very hard to find, but of course, it is not bookable yet for August 2024. When we were booking in fall 2023, there were about 6 hotels on that island alone that had that feature, were highly rated, and in your price range.
