I'm not asking anyone to predict the future, but, at least in my experience, hotels don't really change prices dramatically year over year. So if someone had stayed at a $700/night property that is similar to what we're after last year or is planning on it this year, those would be the people I'd like to hear from.
It might be helpful for you to do a little bit of research yourself as to other places you'd like to go, and come back a month from now when prices are more likely to be set
I have and will continue to do so. This is part of that research.

I very much doubt that the list is this long. You can't be serious about there being hundreds of $500-800/night hotels in Europe that are located on a beach away from a major city, have fewer than (let's say) 50 rooms, and have private pool suites. In fact, I'd be shocked if there were 50 total.
​​​​​​​(also, I'm not sure what you think is fancy about Greece. There are likely hotels on Milos for between $200 and $1200...but you're looking too early for August 2024 for there to be rates at many of them. )
It's all relative. Greece may not be "fancy", as such, but it's certainly "fancier" than, say, Albania or Montenegro.Thank you.
