I could quite easily reel off a plethora of suggestions but without knowing what redemption availability looks like or what surprise commitments you or Mrs C have preventing travel, it would be a pointless process. I would suggest you do the initial legwork and narrow down what your options are first and then take it from there. I'm sure once all that's been established we can then all start playing travel agents together.
