I would have thought it would be easier and more straightforward, particularly with some luggage and as first timers, to get the Narita Express to Shinagawa and change for the Westbound Shinkansen there instead of at Tokyo Station.
So long as the NEX timetable including Shinagawa coincides with your arrival time, main downside might be getting seats together if you have the JR Pass and need unreserved seating.
Remember that suitcase space on the Shinkansen now needs to be pre-booked/pre-reserved. You might find it easiest to send on your hold luggage to your destination from Narita Airport using a Takkyubin service.
As to whether the cost of a one way JR ticket from Narita to Osaka will increase by 50% as the JR Pass has. No, I don’t believe it will increase in a way that outstrips inflation.
