Special Meals

I am new here.
I am planning a trip from Caribbean to Asia sometime in September or October 2023. It would be a long journey of 30+ hours with a few stops.
I have sensitivity to gluten and dairy. I would like to know which airlines caters to such food restrictions? I know that most major airlines offer gluten free meals and vegan meals, but they don't offer a combination. If I order the gluten free meal, it could still have dairy in it. If I order vegan meals, it could still come with bread and pasta made with gluten flours.
I am not vegan. I am ok with eating grilled chicken (no butter used) and steamed veggies. Is there any special meal on flights that offer this kind of food?
I can fly either via USA or via UK and then make more connections, so I can choose from a wide range of airlines. British Airways would actually be the most feasible in terms of shortest journey time.
Just wanted to ask here which airline in your experience would be best suitable for gluten and dairy sensitivities. I had flown Lufthansa on this route in 2017 and I barely got to eat anything. Thankfully for one of the meals,, a first class passenger had ordered similar meal and didn't want to eat, so they gave it to me. For the next meal they gave me 2 bananas.
I know i can take snacks with me, but this would be a very long journey and I will need to eat meals.
also I am not sure, if this is the right forum to post this to, as I am not specific about any airline.
Is there any way this issue could be addressed to airlines in general. People travelling in economy could have sensitivities too. And i am willing to pay for special food.
