I do not know where you read that MCT was 90 min for CX-CX, but that is incorrect.

It used to be 50 min, but the database I use is unavailable now. In any case it is not over 60 min.
One hour is plenty of time for you and your bags to transit in a relax fashion. Of course, if your incoming flight is delayed that could be more problematic. If on a single ticket you will be protected anyway (probably even if on separate tickets).. And there are plenty of CX HKG-BKK flights.
