Pouring a draft beer (micro or coors swill) or wine takes about 15 seconds. Mixing a designer cocktail for a millennial and his SO can take 5+ minutes. But hey, if it's that important to you I'm sure you don't mind waiting.

It's one of the things that I miss about the legacy Northwest lounges which became SkyClubs. I mean there is no reason Amex couldn't have a fridge with bottled/canned beer, soft drinks, even wine. I think the reason they don't is simply "liability" and being able to say that each alcoholic beverage is served by a staff member who identifies who they're serving it to.
For sure the liability and state liquor laws are a concern. The bartender at PHX would not let anyone order more than one drink without asking the person to have the other adult waive from their seat. I gather they will incur major fines and risk shutdown if minors are served.
Of course no excuse for not making soft drinks available except to keep costs down and increase tips (many customers were giving $5 per order to the bartender).
