You should be able to. Would be easier if you did 1 room with the breakfast included then your room using your benefits for breakfast. (whatever value that hotel gives for it).. Probably best to let the hotel know in advance your question in case someone at the front desk is not sure how to process it.
I would say for us, most of the time we stay in Mexico the resorts have recognized the benefits and provided what is expected at a minimum or more as a nice extra.
