it's a Saturday night. AA loads schedule changes on Saturday nights. During this period flights appear and disappear and reservations break. Things settle out by Sunday.

While that can happen, that doesn't appear to be the case here and there do indeed seem to be some periods in late Fall and Winter where the flight does not operate due to low demand. It's not that unusual for airlines to have such seasonal gaps in schedule. EF is showing they already had some existing schedule gaps (no flights on 11/24, 12/24, 12/25), but it looks like they have suspended flight for additional dates with the schedule update this weekend.
