ITA isn't a route search; it's a fare search. The answer is the reason you can't see the whole journey as one fare on Google Flights (which does the same thing) - no airline sells a ticket that includes these flights together. AA and UA have no interline agreement that I'm aware of, and even if they did, they would have to have filed a fare that was valid on this route, which they haven't done, so neither of them will sell you this ticket, so ITA can not give you what you're asking it for.
I understand that it won't show me one ticket for the whole route or sell me the ticket or show me one fare. But it does show me the different fares across each airline with several tickets and gives me the timetable that makes it easier to see getting a ticket on each airline and how that lines up with a ticket on the next airline.
I am looking to get a result that shows the separate fares on the route and have them show it across the timetable. However, I cant get the AA half of the route to appear. I would include a screenshot that might help but I dont have enough posts for that yet.
