AA likely is paying bottom of the barrel prices and getting the equivalent service. Much like AA's inflight service, it's likely rudderless/unmanaged.
Not to beat the dead horse, but where do you need to read between the lines? Snack for a fee, a list of snacks provided are clear information. Not sure where you would get confused.
In any case, as far as catering, are you saying that due to catering problems AA can't provide all the items they list on their food for purchase list on the website?
Even if AA solved that problem. How good would that be? The snack box, cheese platter or breakfast box look just as dreadful and not adequate for a 6hr trip. Would those items be satisfactory for you on a 6 hour early morning flight?
